Oizumi's defining specialty is jukusei — controlled fish maturation. Rather than relying solely on absolute freshness, Maciel carefully ages selected fish to develop texture, concentration of flavor, and umami. Each specimen is evaluated according to species, size, and fat content before undergoing carefully controlled maturation.
